Banana and Golden Syrup Muffins

What do you do when you have a load of eggs that need using up and some overly ripe bananas? Make some banana muffins of course!

I'm a big fan of banana muffins, as can be seen from a previous banana muffin baking post, but this time I decided to mix it up a little. I've had a huge bottle of golden syrup in my cupboard for a while and not really known what to do with it (eating it by the spoonful straight from the bottle was getting a bit ridiculous, please don't judge). As I haven't baked anything in a while I decided to look up some golden syrup cake recipes, before landing on this banana and golden syrup muffin recipe.

These muffins are incredibly easy to make, and by swapping butter for vegetable oil, they are deliciously light and moist! Despite using the stated amount of golden syrup, the flavour didn't really come through, so I'd recommended upping the amount of golden syrup a little, or even putting a dollop of golden syrup in the centre for a sugary surprise!
