Blackberries are so easy to find in the wild over the summer, and with all this hot weather they're growing in abundance! I love blackberry picking; it always feels (and tastes) so much better baking with ingredients you have hand picked yourself. I have always wanted to make a pie, so settled on an absolute classic - blackberry and apple pie!
I decided to make my own sweet pastry using this recipe, and was pretty pleased with how it turned out, apart from adding a bit too much milk and having to save it from turning into a sticky mess! I then followed this recipe to create the pie. It was actually surprisingly easy to bake, and I love the traditional rustic effect of the lattice top. For my first ever pie I was very pleased with how it turned out - no dreaded soggy bottom (GBBO reference, people)! Serve warm with a dollop of vanilla ice cream and you've got yourself a delicious summertime treat!
